THE PROCESS
Bigger doesn’t always mean better. By focusing on artesan methodology, Pomona Distilling Co can take the time to bring careful consideration into every step of the distilling process.
We use an activated charcoal filtration with wood & peat moss to polish the spirit and remove impurities giving us a smooth, clean and pure final product. We mindfully source local sustainable ingredients and native botanicals if not from our own farm, then from our neighbours, to produce a distinct flavour that embodies the Pomona spirit.

Immerse your senses with our bespoke Gin Masterclass, and create a personalised blend of botanicals for yourself, or to commemorate that special occasion. Your masterclass begins with a refreshing Pomona Distilling Company signature gin before we take you through the history and artesan methods of traditional gin distilling. You’ll then discover an array of native botanicals locally sourced from the beautiful Noosa hinterland region to customise your gin blend. Once your personalised botanical blend is complete, you’ll get to drink and take home a sample of your own creation.
OUR SPIRIT
Small batch production enables us to get to know each and every bottle. We pick, select, distil, blend and taste before hand-bottling, labelling. We then allow our product the time to age which allows the unique flavours of our botanicals to infuse and blend with the pure local spring water to create a premium quality product that reflects creativity, character and community spirit.
